Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cornstarch
Thickens the liquid into a smooth, sliceable filling as it heats.
Butter
Adds richness and a tender, smooth texture to the filling.
Sugar
Sweetens the filling and balances the sharpness of the lemon.
Lemon
Provides the tart, aromatic flavour that defines the pie.
Egg
Adds richness and helps the filling set when baked.

The step that matters

Stirring the hot cornstarch mixture into the creamed butter and sugar. Cornstarch thickens only when heated and must be stirred to dissolve evenly; stirring in well avoids lumps and an uneven, gummy texture in the finished filling.
