What each ingredient does

Oysters
Are the main ingredient, cooked gently and then preserved in the spiced pickling liquid.
Vinegar
Provides acidity that sharpens the flavour and helps preserve the oysters.
Salt
Seasons the oysters and draws out liquid during the initial cooking.

The step that matters

Pouring the hot pickling liquid over the cooled oysters. The liquid must be boiling hot when poured so the vinegar mixture is hot enough to help preserve the oysters. Oysters should be cooled first so they do not keep cooking and turn tough.

Swap the cinnamon

How well each one fits the dish's main ingredients (oyster, vinegar, pepper, clove):

  1. Allspicefits better
  2. Tarragonfits about as well
  3. Marjoramfits about as well
  4. Cinnamonthe original

Fit is the average pairing score against oyster, vinegar, pepper, clove. Candidates are from the same food group and used in at least 100 recipes.
