What each ingredient does

Eggs
Set into soft curds as they cook, forming the body of the dish.
Sweet milk
Keeps the eggs tender and moist by diluting the protein as it sets.
Butter
Adds richness and fat, helping the curds stay soft and glossy.

The step that matters

Remove from heat before fully thickened. Egg proteins keep tightening after leaving the heat, so pulling the eggs while still slightly soft and continuing to stir with residual heat prevents them from becoming dry and rubbery.
