What each ingredient does

Gelatine
Sets the liquid into a firm, wobbly jelly as it cools.
Sugar
Adds sweetness and helps give the jelly a softer, more pleasant body.
Lemon juice
Adds acidity that brightens the flavour and balances the sugar.
Pineapple juice
Adds fruity flavour to the liquid that sets around the fruit.
Whipped cream
Adds richness and a cool, creamy contrast to the jelly.

The step that matters

Dissolve the gelatine fully before adding the sugar and hot water. Gelatine must be hydrated in cold water first so it dissolves evenly. If it is not fully dissolved and mixed in, it can form lumps or set unevenly, leaving a weak or grainy jelly.

Swap the lemon
