Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

  1. Preheat the oven to 400°F (200°C).

  2. Layer the diced potatoes in a baking dish, covering each layer with grated cheese.

  3. In a bowl, mix melted butter with cracker crumbs, adding salt and red pepper.

  4. In a saucepan, melt 2 tablespoons of butter, add onion, and stir in flour until combined.

  5. Gradually add milk, stirring until thickened, then season with salt and pepper.

  6. Pour the sauce over the potatoes and cheese, dust with paprika, and top with seasoned crumbs.

  7. Bake until brown.
