Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Grapes
Provide the bulk of the fruit, whose pulp and juice cook down into the preserve.
Sugar
Sweetens the preserve and helps it thicken as the mixture cooks.
Lemon
Adds acidity that brightens the sweetness and supports setting.
English walnuts
Add crunch and a nutty flavor that contrasts with the soft fruit.

The step that matters

Cooking until thickened after adding the sugar. Sugar and evaporation concentrate the mixture and firm it up. Stopping too early leaves the preserve runny, while cooking too long makes it stiff and sticky once cooled.

Swap the raisin

How well each one fits the dish's main ingredients (grape, sugar, lemon, orange, walnut):

  1. Figfits better
  2. Cranberryfits better
  3. Vanillafits better
  4. Raisinthe original

Fit is the average pairing score against grape, sugar, lemon, orange, walnut. Candidates are from the same food group and used in at least 100 recipes.
