Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the batter

  1. Preheat the oven to 350°F (175°C).

  2. Beat the egg whites until stiff peaks form.

  3. Sift the baking powder into the flour.

  4. Gently fold the flour mixture into the beaten egg whites and sugar, mixing as little as possible.

  5. Add the vanilla and lemon zest, and mix gently.

Bake

  1. Pour the batter into a prepared pan and bake for 40 minutes.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg whites
Whipped into foam, they trap air and give the cake its light, airy structure.
Sugar
Sweetens the cake and stabilises the whipped egg white foam.
Flour
Provides the starch and gluten network that sets the cake's structure as it bakes.
Baking powder
Releases gas in the batter to help the cake rise.

The step that matters

Folding the flour into the egg whites. Overmixing knocks air out of the whipped egg white foam, so the cake bakes up dense instead of light. Fold gently and stop as soon as the flour is combined.
