What each ingredient does

Hominy grits
Provide the starchy body that thickens with cooking into a soft, cohesive mush.
Water
Hydrates the grits so their starch gelatinizes into a smooth, spoonable texture.

The step that matters

Adding the grits to boiling water. Grits added slowly to boiling water disperse evenly without clumping. Adding them all at once or to cool water can form lumps that stay dry inside while the outside overcooks.
