Why it works: Capers and olive match in chemistry and in kitchens. They rank in the top 3% of all ingredient pairs, and cooks put them together in 1,688 recipes. Both carry coumarin, which smells sweet, hay. The science ↓
Salmon Ring
Ingredients
Directions
Prepare the fish
Boil the lobster meat and salmon in salted water until tender.
Fill a round tin fish border very solidly with the cooked seafood.
Chop the hard boiled eggs, capers, and olives, and add them to the fish border.
Make the aspic and set
Dissolve the gelatin in cold water, then mix in the soup stock, bouillon, Worcestershire sauce, and lemon juice.
Strain the mixture through a cloth and pour it over the fish.
Put the dish on ice and let it chill.
This can be made a day before serving.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Lobster meat
- Provides the main seafood flavor and firm, tender texture in the ring.
- Salmon
- Adds rich flavor and body to the seafood filling.
- Gelatin
- Sets the liquid stock into a firm, sliceable aspic that holds the ring together.
- Hard boiled eggs
- Add a soft, creamy texture and mild richness to the filling.
- Soup stock
- Forms the savory liquid base that becomes the set aspic.
The step that matters
Fill the fish border very solidly. Packing the cooked seafood tightly leaves fewer air gaps, so the set aspic holds the ring together and slices cleanly rather than crumbling or leaving hollows.
