Apple Sauce Cake

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point. The book gives no cooking times either; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

Prepare the batter

  1. Preheat the oven to 350°F (175°C).

  2. Cream together the sugar and butter until light and fluffy.

  3. Stir in the raisins, cinnamon, nutmeg, and cloves.

  4. Add the apple sauce and mix well.

  5. Dissolve the baking soda in a little hot water and add to the mixture.

  6. Gradually add the flour, mixing until just combined.

Bake

  1. Pour the batter into a greased cake pan and bake for 30-40 minutes or until a toothpick comes out clean.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Butter
Creamed with sugar, it traps air and adds richness and tenderness to the crumb.
Apple sauce
Adds moisture and natural sweetness, keeping the cake soft.
Baking soda
Reacts with the acidic components in the batter to produce gas that helps the cake rise.
Flour
Provides the structure that sets as the cake bakes.
Raisins
Add chewy texture and concentrated sweetness throughout the cake.

The step that matters

Mixing the flour in gently. Once flour is added, gluten begins to form. Overmixing makes the cake tough and dense, so mix only until the flour is just combined.

Swap the apple

How well each one fits the dish's main ingredients (sugar, butter, raisin, cinnamon, nutmeg, clove, sauce):

  1. Vanillafits better
  2. Figfits better
