Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the batter

  1. Preheat the oven to 350°F (175°C).

  2. Beat the yolks of the eggs with the sugar until creamy.

  3. Stir in the matzo meal, potato flour, and spices.

  4. Dissolve the chocolate in a little boiling water and add it to the mixture.

  5. Fold in the stiffly beaten egg whites.

Bake

  1. Pour the batter into a greased baking pan and bake for 1 hour.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Yolks add richness and whites, beaten stiff and folded in, give the torte its light, airy structure.
Matzo meal
Provides the bulk of the batter, giving body and structure in place of flour.
Potato flour
Adds body and a tender crumb to the batter.
Sugar
Sweetens the batter and helps the yolks whip to a creamy texture.
Chocolate
Adds flavor and color, and its melted liquid moistens the batter.

The step that matters

Folding in the egg whites. Stiffly beaten whites trap air that leavens the batter. Stirring them vigorously deflates that foam and leaves a dense torte, so fold gently until just combined.

Swap the potato

How well each one fits the dish's main ingredients (egg, sugar, chocolate, flour, cinnamon, clove):

  1. Arrowrootfits better
  2. Sweet potatofits better
  3. Beetrootfits better
  4. Potatothe original

Fit is the average pairing score against egg, sugar, chocolate, flour, cinnamon, clove. Candidates are from the same food group and used in at least 100 recipes.
