Why it works: Cucumber and mustard match in chemistry and in kitchens. They rank in the top 3% of all ingredient pairs, and cooks put them together in 2,281 recipes. Both carry 2-isopropyl-3-methoxypyrazine, which smells earthy, pea. The science ↓
Pickled Cucumbers
Ingredients
Directions
Peel and slice the cucumbers. Layer them in a stone jar, sprinkling coarse sea salt on each layer. Let sit overnight.
The next morning, squeeze the cucumbers thoroughly and place them on a platter.
Boil enough vinegar to cover the cucumbers with mustard seeds, whole black peppers, and cloves.
Once the vinegar boils, add the cucumbers and let them bubble up once, then remove immediately.
Add a small quantity of sugar, place the cucumbers in jars, and add one small red pepper to each jar. Seal while hot.
