Why it works: Parsley and pepper match in chemistry and in kitchens. They rank in the top 2% of all ingredient pairs, and cooks put them together in 34,122 recipes. Both carry 4'-methylacetophenone, which smells bitter almond. The science ↓

Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the sweetbreads

  1. Parboil the sweetbreads until cooked, then let them cool.

  2. Cut up the sweetbreads and remove any tough parts.

Make the sauce

  1. In a saucepan, boil the milk and add the butter, salt, pepper, parsley, onion, and Worcestershire sauce.

  2. Stir in the cornstarch until well combined.

  3. Mix the sauce with the sweetbreads and place in individual patty dishes.

Bake and serve

  1. Sprinkle the tops with buttered breadcrumbs.

  2. Bake in a preheated oven at 400°F (200°C) for 10 minutes.

The flavor team

The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

  1. Parsley + peppertop 2% of all pairs

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sweetbreads
Provide the main meaty texture that the creamy sauce coats.
Milk
Forms the liquid base of the sauce that cornstarch thickens.
Cornstarch
Thickens the milk into a creamy sauce that holds the sweetbreads together.
Butter
Adds richness and flavor to the sauce and helps the breadcrumbs brown.

The step that matters

Stir in the cornstarch until well combined. Cornstarch must be fully dispersed in the hot milk and cooked; if clumped or undercooked, the sauce stays lumpy or tastes starchy. Stirring keeps it smooth as it thickens.

Swap the onion

How well each one fits the dish's main ingredients (milk, parsley, sauce, pepper, butter):

  1. Capsicumfits better
  2. Potatofits better
  3. Carrotfits better
  4. Onionthe original

Fit is the average pairing score against milk, parsley, sauce, pepper, butter. Candidates are from the same food group and used in at least 100 recipes.
