Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Preheat the oven to 350°F (175°C).

  2. Butter a baking dish and line the bottom and sides with thin slices of buttered bread.

Assemble and bake

  1. Fill the center with thinly-sliced apples and grate a little nutmeg over them.

  2. Mix ½ cup molasses with ½ cup boiling water and pour over the apples.

  3. Sprinkle with brown sugar and cover with more buttered bread.

  4. Cover the top with a tin pie pan and bake for two hours.

Serve

  1. When done, loosen the edges with a knife and turn out onto a dish.

  2. Serve with sugar and cream.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Apples
Provide the fruit filling that softens and becomes tender during the long bake.
Thin slices of buttered bread
Form the lining and top layer that soak up the molasses syrup and hold the filling together.
Molasses
Adds dark color, deep sweetness and a rich, slightly bitter flavor to the syrup.
Brown sugar
Adds sweetness and moisture, helping the syrup caramelize slightly during baking.

The step that matters

Covering the top with a tin pie pan. The covered pan traps steam so the apples cook through and the bread stays moist during the long two-hour bake. Removing or skipping the cover would let the top dry out and scorch before the apples are tender.

Swap the nutmeg

How well each one fits the dish's main ingredients (butter, bread, apple, molasses, sugar):

  1. Cinnamonfits better
  2. Clovefits about as well
  3. Nutmegthe original
  4. Gingerfits about as well

Fit is the average pairing score against butter, bread, apple, molasses, sugar. Candidates are from the same food group and used in at least 100 recipes.
