Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sugar
Sweetens the sauce and helps form a syrup with the water.
Lemon juice
Adds acidity and bright lemon flavour.
Egg yolks
Thicken the sauce as they gently cook and set when heated.

The step that matters

Stir the egg yolks into the syrup and beat rapidly. Egg yolks can scramble if they meet hot syrup too quickly or sit still over heat. Constant beating while the bowl is over boiling water distributes the heat evenly and keeps the yolks smooth as the sauce thickens.
