What each ingredient does

Cream
Provides fat for a rich body and a smooth, creamy texture once frozen.
Java coffee
Supplies the main coffee flavor and aroma, extracted by heating in the cream.
Powdered sugar
Adds sweetness and dissolves easily, so it blends in without grittiness.

The step that matters

Let the mixture cool, then add the remaining cream. Cooling the hot base before adding the cold cream keeps the fat from softening and separating, and helps the mixture freeze smoothly rather than becoming icy.
