Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Pot roast
Long simmering in liquid breaks down connective tissue, making the meat tender and moist.
Lard
Fat for browning the meat, building color and flavor on its surface before simmering.
Onion
Adds savory sweetness and aroma to the cooking liquid, which becomes the base of the sauce.

The step that matters

Browning the meat on all sides. Browning is the Maillard reaction between sugars and proteins at the surface, creating deep color and roasted flavor. Meat that is pale or steamed at this stage gives a flatter-tasting sauce.

Swap the onion

How well each one fits the dish's main ingredients (clove, celery, cinnamon, horseradish):

  1. Mustardfits better
  2. Beetrootfits better
  3. Turnipfits better
  4. Onionthe original

Fit is the average pairing score against clove, celery, cinnamon, horseradish. Candidates are from the same food group and used in at least 100 recipes.
