Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Lamb kidneys
The main ingredient, whose firm, tender texture is the centre of the dish.
Butter
Fat for frying, adding richness and browning the kidney slices.
Flour
Dredging coats the slices, which thickens the cooking liquid into a light sauce.

The step that matters

Fry in hot butter. Kidneys cooked too long or over too low heat become tough and grey. A hot pan browns the surface quickly while keeping the centre tender.

Swap the onion

How well each one fits the dish's main ingredients (lamb, pepper, butter, flour):

  1. Okrafits better
  2. Potatofits better
