Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggplant
Forms the main body of the dish, becoming tender when fried.
Egg
Binds the cracker crumbs to the slices so the coating adheres during frying.
Cracker crumbs
Form a crisp, browned coating that contrasts with the soft eggplant.

The step that matters

Frying the coated slices in hot oil. If the oil is not hot enough, the coating absorbs more oil and turns greasy instead of crisp and golden. Oil that is too hot browns the crumbs before the eggplant cooks through.
