Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Soak the bread squares in 1 cup of cold milk for 30 minutes.

  2. Beat the eggs in a separate bowl.

Make and bake

  1. Add sugar, salt, and the remaining ½ cup of milk to the eggs and mix well.

  2. Pour the egg mixture over the soaked bread.

  3. Grate nutmeg on top and bake at 350°F (175°C) until set.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Set the custard so the pudding holds its shape as it bakes.
Bread
Absorbs the milk and egg mixture to form the pudding's soft body.
Milk
Provides the liquid that soaks the bread and forms the custard with the eggs.
Sugar
Adds sweetness and helps the top brown lightly in the oven.

The step that matters

Bake until set. Eggs set when heated to roughly 160°F to 180°F, so underbaking leaves a runny custard while overbaking can make it curdled and rubbery.

Swap the nutmeg

How well each one fits the dish's main ingredients (bread, milk, egg, sugar):

  1. Cinnamonfits better
  2. Nutmegthe original
  3. Gingerfits less well
  4. Allspicefits less well

Fit is the average pairing score against bread, milk, egg, sugar. Candidates are from the same food group and used in at least 100 recipes.
