Oatmeal Gruel

Ingredients

Directions

Make the porridge

  1. Put the oatmeal into a pint of boiling water.

  2. Let it boil gently, stirring often until it reaches your desired thickness.

  3. Stir continuously while boiling, lifting the spoon gently up and down to let the gruel fall back into the pan.

Finish and serve

  1. Strain the mixture and add butter, wine, nutmeg, or any preferred flavoring while warm.

  2. If using fine oatmeal, sift it and mix it with a little cold water to form a thick batter before adding to boiling water.

What each ingredient does

Oatmeal
Swells and thickens in boiling water, giving the porridge its body and texture.
Butter
Adds richness and a smooth mouthfeel to the warm porridge.

The step that matters

Stirring while the oatmeal boils. Oatmeal left unstirred can settle and scorch on the bottom of the pan, and clumps form when it hits hot water. Frequent stirring keeps the texture even and the thickness consistent.

Swap the nutmeg

How well each one fits the dish's main ingredients (butter, wine):

  1. Thymefits better
  2. Cinnamonfits better
  3. Tarragonfits better
  4. Nutmegthe original

Fit is the average pairing score against butter, wine. Candidates are from the same food group and used in at least 100 recipes.
