Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggplant
Forms the tender interior that contrasts with the crisp fried coating.
Flour or fine cornmeal
Forms a dry coating that browns and crisps in the hot fat.
Beaten egg
Acts as a binder so the fine crumbs adhere to the slices.
Fine crumbs
Forms an outer crust that browns and crisps when fried.

The step that matters

Drying each slice before coating. Surface moisture left on the slices turns to steam in hot fat, which keeps the coating from adhering and browning crisply, and can cause spattering.
