What each ingredient does

Pearled barley
Forms the body of the soup and thickens the broth as its starch softens during long simmering.
Butter
Adds richness and a silky mouthfeel to the finished broth.
Celery stalks
Release aromatic flavor into the water during simmering, then are removed.

Swap the carrot

The recipe marks carrot as optional. How well each one fits the dish's main ingredients (barley, celery, butter, cream, parsley):

  1. Leekfits better
  2. Carrotthe original
  3. Potatofits about as well
  4. Turnipfits less well

Fit is the average pairing score against barley, celery, butter, cream, parsley. Candidates are from the same food group and used in at least 100 recipes.
