Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cornstarch
Thickens the liquid into a smooth sauce as it heats.
Butter
Adds richness and a glossy finish to the sauce.
Lemons
Provide the sharp citrus flavour and acidity that defines the sauce.
Egg yolk
Optional addition that enriches the sauce and adds body.

The step that matters

Boil the mixture for 10 minutes. Cornstarch only thickens fully once the liquid reaches a boil, so the sauce must be kept at a steady boil to cook out the raw starch taste and reach full thickness.
