To Stew Mussels

Ingredients

Directions

Prepare the mussels

  1. Clean the mussel shells thoroughly with repeated washings.

  2. Boil the mussels in a covered saucepan with a small amount of boiling water until the shells open, about 10 minutes.

  3. Remove the mussels from their shells, saving the liquor that runs from them.

  4. Pick out the hairy appendage from each mussel.

Make the stew

  1. Combine the mussels with ½ pint of the saved liquor.

  2. Add more liquor if needed.

  3. Add the blade of mace.

  4. Thicken the mixture with the butter rolled in flour.

  5. Let the mussels stew gently for a few minutes.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Mussels
Provide the main protein and sea-flavoured body of the stew.
Butter rolled in flour
Thickens the cooking liquor into a light, smooth sauce as the flour starch sets.
Saved mussel liquor
Supplies the briny base liquid that carries the stew's flavour.

The step that matters

Let the mussels stew gently for a few minutes. Boiling vigorously after thickening can toughen mussel meat and cause the flour-thickened liquor to break or turn lumpy. Gentle heat keeps the mussels tender and the sauce smooth.

Swap the mace

How well each one fits the dish's main ingredients (butter, flour):

  1. Jalapenofits better
  2. Capersfits better
  3. Nutmegfits better
  4. Macethe original

Fit is the average pairing score against butter, flour. Candidates are from the same food group and used in at least 100 recipes.
