Meat Pies and Puddings
Ingredients
Directions
The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.
Wash your hands well and plunge them in cold water for a minute or two in hot weather, then dry them thoroughly.
Use a marble pastry slab if possible; if using wood, keep it very clean.
Make the crust using clarified beef dripping or lard for a homely pie.
Preheat the oven to 400°F (200°C).
Test the oven heat by holding your hand inside; if you can keep it there for a few seconds, it is too cold.
Make a small hole at the top of the pie to allow gases to escape and for adding gravy if needed.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.
