Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Gelatine
Sets the liquid into a wobbly jelly that holds the fruit in place.
Sugar
Sweetens the jelly and balances the tartness of the citrus.
Lemon
Adds acidity that brightens the flavour of the jelly.
Oranges
Contribute juice and fruit pieces for flavour and texture.

The step that matters

Soak the gelatine fully before adding boiling water. Gelatine must hydrate in cold water first so it dissolves evenly in the hot liquid. Undissolved granules can leave lumps or weak patches, so the jelly may not set uniformly.

Swap the banana

How well each one fits the dish's main ingredients (sugar, orange, lemon, fig):

  1. Vanillafits better
  2. Cranberryfits better
  3. Apricotfits better
  4. Bananathe original

Fit is the average pairing score against sugar, orange, lemon, fig. Candidates are from the same food group and used in at least 100 recipes.
