Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Whipped yolks and whites provide structure and lift, so the cake rises and holds its crumb.
Sugar
Beaten with the yolks, it adds sweetness and helps build a stable, airy batter.
Grated crackers
Fine crumbs add body and a light, tender texture to the batter.
Sweet almonds
Ground or chopped nuts add richness, flavor and a moist, dense texture.
Citron
Candied citrus peel adds aromatic, slightly bitter flavor and chewy texture.

The step that matters

Folding in the beaten egg whites. Whites hold air only when beaten until stiff, and folding gently keeps that air in the batter. Stirring vigorously deflates the foam, leaving a dense, flat cake.

Swap the almond

How well each one fits the dish's main ingredients (egg, lemon, sugar):

  1. Pistachiofits about as well
  2. Milletfits about as well
  3. Almondthe original
  4. Chickpeafits about as well

Fit is the average pairing score against egg, lemon, sugar. Candidates are from the same food group and used in at least 100 recipes.
