Almond Torte

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point. The book gives no cooking times either; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

Make the crust

  1. Preheat the oven to 350°F (175°C).

  2. In a bowl, rub together the butter, flour, and egg yolks until well combined.

  3. Line the bottom and sides of a removable-bottom tin with the dough.

Fill and bake

  1. In another bowl, mix the remaining ingredients together.

  2. Pour the mixture into the lined tin.

  3. Bake for about 30-40 minutes or until golden.

Egg yolks
Bind the crust and add richness and color.
Egg whites
Add structure and moisture to the filling as it sets.
