Why it works: Celery and pepper match in chemistry and in kitchens. They rank in the top 5% of all ingredient pairs, and cooks put them together in 16,012 recipes. Both carry 4'-methylacetophenone, which smells bitter almond. The science ↓

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Celery
- Provides the main vegetable flavor and body of the soup once mashed.
- Milk
- Forms the creamy base of the soup and carries the flavors.
- Globe a-l flour
- Thickens the milk as it cooks, giving the soup its body.
- Butter
- Adds richness and a smooth, rounded mouthfeel to the finished soup.
The step that matters
Adding the flour mixture to the boiling milk. Flour mixed into hot liquid without first being dispersed in cold milk clumps into lumps. Stirring the flour into cold milk first lets the starch separate evenly, so it thickens smoothly when added to the boiling milk.
Swap the mace
How well each one fits the dish's main ingredients (milk, flour, butter, celery, onion, pepper, cream):
- Parsleyfits better
- Nutmegfits better
- Thymefits better
- Macethe original
Fit is the average pairing score against milk, flour, butter, celery, onion, pepper, cream. Candidates are from the same food group and used in at least 100 recipes.
