Potato Flour Cake

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point. The book gives no cooking times either; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

Prepare

  1. Preheat the oven to 350°F (175°C).

Make the batter

  1. Beat the egg whites until stiff peaks form.

  2. Gradually mix in the sugar while continuing to beat.

  3. In a separate bowl, combine the egg yolks, potato flour, baking powder, vanilla, and salt.

  4. Fold the egg yolk mixture into the egg whites gently.

  5. Pour the batter into two greased cake pans.

Bake and fill

  1. Bake for 25-30 minutes or until a toothpick comes out clean.

  2. Let the cakes cool, then fill with whipped cream and chopped nuts.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Whipped whites give the cake its airy structure, and the yolks add richness and moisture.
Sugar
Sweetens the batter and helps stabilise the whipped egg whites.
Potato flour
Provides the starch that sets the cake's crumb once baked.
Baking powder
Releases gas during baking so the cake rises and becomes light.

The step that matters

Folding the yolk mixture into the whites. Folding gently keeps the air trapped in the whipped egg whites. Stirring or deflating the batter makes the cake dense and flat after baking.

Swap the potato

How well each one fits the dish's main ingredients (egg, sugar, flour, vanilla, cream, nuts):

  1. Arrowrootfits better
  2. Sweet potatofits better
  3. Beetrootfits better
  4. Potatothe original

Fit is the average pairing score against egg, sugar, flour, vanilla, cream, nuts. Candidates are from the same food group and used in at least 100 recipes.
