Potato Starch Cake

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point. The book gives no cooking times either; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

Prepare the batter

  1. Preheat the oven to 350°F (175°C).

  2. Beat the egg whites until stiff peaks form.

  3. In a separate bowl, beat the egg yolks with 1/2 cup sugar until light and fluffy.

  4. Add the flavoring, potato starch, and baking powder to the yolk mixture and mix well.

  5. Gently fold the egg whites into the yolk mixture until combined.

Bake and assemble

  1. Pour the batter into two greased cake pans.

  2. Bake for 25-30 minutes or until a toothpick comes out clean.

  3. Let the cakes cool, then spread whipped cream between the layers and on top.

What each ingredient does

Eggs
Whipped whites provide the air and structure that lift the light sponge.
Potato starch
Gives a tender, delicate crumb that is lighter than wheat flour.
Baking powder
Releases gas in the oven so the batter rises and stays airy.
Sugar
Sweetens the cake and helps stabilize the beaten egg yolks and whites.

The step that matters

Gently fold the egg whites into the yolk mixture. Egg whites hold air only while whipped. Vigorous stirring deflates them, leading to a dense, flat cake, so fold slowly with a spatula until just combined.

Swap the potato

How well each one fits the dish's main ingredients (egg, sugar):

  1. Sweet potatofits better
  2. Capsicumfits better
  3. Asparagusfits better
  4. Potatothe original

Fit is the average pairing score against egg, sugar. Candidates are from the same food group and used in at least 100 recipes.
