Pound Cake

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Preheat your oven to 350°F (175°C).

Make the batter

  1. In a large bowl, cream together the butter and sugar until light and fluffy.

  2. Add the eggs one at a time, mixing well after each addition.

  3. Sift together the flour and baking powder, then gradually add to the butter mixture.

  4. Mix in the lemon zest and mace until well combined.

Bake

  1. Pour the batter into a greased loaf pan.

  2. Bake for 1 hour and 15 minutes, or until a toothpick inserted in the center comes out clean.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Butter
Creams with sugar to trap air and adds richness and tender texture.
Eggs
Provide structure and richness, and help the batter bind and rise.
All-purpose flour
Forms the structure of the cake as its proteins set during baking.
Granulated sugar
Sweetens the cake and, creamed with butter, helps create a light texture.
Baking powder
Releases gas in the batter to help the cake rise.

The step that matters

Creaming the butter and sugar. Beating until light and fluffy traps air in the fat, which expands in the oven and gives the cake lift. Under-creaming leads to a dense cake.

Swap the mace

How well each one fits the dish's main ingredients (flour, sugar, butter, egg, lemon):

  1. Cinnamonfits better
  2. Nutmegfits better
  3. Parsleyfits better
  4. Macethe original

Fit is the average pairing score against flour, sugar, butter, egg, lemon. Candidates are from the same food group and used in at least 100 recipes.
