What each ingredient does

Grapes
Provide the fruit flavor, natural pectin and acidity that help the preserve set.
Sugar
Adds sweetness and, as it concentrates, helps the liquid thicken and keeps the preserve stable.

The step that matters

Add the sugar and cook until the liquid thickens. Sugar, pectin and acid set together only at a high enough concentration. Stopping too early leaves the preserve runny, while cooking too long makes it stiff and may crystallize as it cools.
