What each ingredient does

Truffles
Provide the main aroma and flavor of the dish.
Butter
Adds fat for richness and helps carry the truffle aroma.
Broth
Supplies the liquid that simmers the truffles into a sauce.
White wine
Adds acidity and aromatic depth to the sauce.
Sugar
Adds a little sweetness to balance the savory sauce.
Fecula
Starch that thickens the sauce when heated, if it needs more body.

The step that matters

Adding the fecula. Starch thickens only when heated in a simmering liquid and needs a few minutes to swell. Adding it too late leaves the sauce thin, while adding it without stirring can form lumps that stay gluey.
