Calf's Liver

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Prepare a pot of salted water and bring it to a boil.

  2. Add the liver and boil for 5 minutes, then drain.

  3. In a bowl, combine sweet oil, bay leaf, thyme, parsley, green onion, salt, and pepper.

  4. Add the liver to the mixture, cover, and marinate for 4 to 6 hours, turning occasionally.

Roast and serve

  1. Preheat your oven to 400°F (200°C).

  2. Wrap the liver in buttered paper and roast it, basting with the marinade oil, for 35 to 45 minutes.

  3. Remove the paper a few minutes before it's done and baste with drippings until cooked through.

  4. Serve with gravy.

What each ingredient does

Calf's liver
Is the main protein, and its tender texture depends on brief blanching and gentle roasting.
Sweet oil
Carries the herbs into the liver during marinating and adds moisture during basting.
Butter
Adds richness and helps the liver brown and stay moist under the paper.
Broth
Adds savory liquid that turns the pan drippings into a simple gravy.

The step that matters

Remove the paper a few minutes before it's done. Uncovering the liver lets its surface brown and dry slightly, while basting with drippings keeps the inside moist. Leaving the paper on too long results in pale, steamed meat.

Swap the onion

How well each one fits the dish's main ingredients (liver, thyme, parsley, pepper, butter, wine, allspice):
