What each ingredient does

Granulated gelatin
Forms the gel structure that lets the consommé set firm when cold.
Vegetone
Provides the savory, broth-like flavor base for the consommé.

The step that matters

Dissolve the gelatin fully. Gelatin must dissolve completely in the hot liquid before chilling. Undissolved granules leave soft spots and uneven setting in the finished gel.
