  2. In a bowl, combine the stewed and strained apples with butter, lemon juice, and lemon rind.

  3. In another bowl, beat the eggs and sugar together until well mixed.

  4. Add the grated nutmeg and scalded milk to the egg mixture, then combine with the apple mixture.

Bake

  1. Pour the mixture into two deep quart tin plates and cover with rich puff pastry.

  2. Bake for 45 minutes or until golden brown.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sour apples
Provide the main bulk and tart flavour of the filling.
Eggs
Set the custard-like filling and add richness and structure.
Butter
Adds fat for richness and a smooth, tender texture.
Milk
Adds moisture and creaminess to the custard base.
Sugar
Sweetens the filling and helps balance the sour apples.

The step that matters

Combining the egg mixture with the apples. Eggs thicken when heated, so the filling sets evenly only if the mixture is well combined and the scalded milk is added gently. Poorly blended eggs can cause uneven or curdled texture during baking.

Swap the apple

How well each one fits the dish's main ingredients (butter, lemon, egg, sugar, nutmeg, milk):
