Ingredients

Directions

Prepare

  1. Cut up the vegetables of your choice, ensuring to include potatoes or beans for thickening.

Make the base

  1. In a saucepan, heat the butter until very hot.

  2. Add the cut onions and stir to prevent burning until they are nicely browned.

  3. Stir in the flour until it reaches the same color as the onions.

  4. Pour in the hot water, then add pepper and salt, followed by the other vegetables.

Simmer and serve

  1. Let the mixture simmer for two hours, adding more hot water as needed.

  2. Press the soup through a colander and return it to the pot to simmer until ready to serve.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Potatoes or beans
Break down during simmering to thicken the soup body.
Butter
Carries heat and browns the onions, adding richness to the base.
Flour
Browns with the onions and thickens the liquid into a body.
Onions
Caramelise when browned, adding sweetness and depth of flavour.

The step that matters

Stirring the onions while they brown. Onions scorch quickly in hot butter, and scorched sugars turn bitter and dark. Constant stirring keeps them evenly golden, which gives the soup its flavour base.
