Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Potatoes
Provide the bulk of the filling and a soft, starchy body once mixed.
Eggs
Set the custard as they cook and add richness and structure to the filling.
Butter
Adds richness and a tender texture to the filling.
Sugar
Adds sweetness and helps soften the texture of the filling.
Milk
Adds moisture and creaminess, loosening the potato into a smooth filling.

The step that matters

Fold in the beaten egg whites. Folding keeps the whites' trapped air in the filling, so the pie rises lightly. Stirring them in hard would deflate the foam and leave a denser pie.

Swap the mace

How well each one fits the dish's main ingredients (potato, milk, butter, sugar, egg, lemon, wine):

  1. Cinnamonfits better
  2. Nutmegfits better
  3. Thymefits better
  4. Macethe original

Fit is the average pairing score against potato, milk, butter, sugar, egg, lemon, wine. Candidates are from the same food group and used in at least 100 recipes.
