Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Beef shank
Provides meaty body and savory richness once boiled and finely chopped.
Suet
Adds fat that keeps the filling moist and rich as it cooks.
Apples
Contribute moisture, tartness and bulk to the filling.
Raisins
Add chewy texture and concentrated sweetness.
Sugar
Sweetens the filling and helps preserve it.
Molasses
Adds dark color, deep sweetness and a rich, slightly bitter flavor.

The step that matters

Scalding the mixture for one hour. Heating the filling thoroughly helps reduce microbial growth, which matters because the mixture holds meat, fat and fruit and is kept for storage. Keep the kettle at a gentle simmer so the mixture does not scorch on the bottom.

Swap the apple
