What each ingredient does

Turnips
Provide the main vegetable body and mild sweetness, and brown when fried.
Gravy soup
Forms the liquid base that carries the flavor of the whole dish.

The step that matters

Frying the turnips until nicely colored. Frying browns the turnip surfaces through the Maillard reaction, adding roasted flavor. If they are fried too little, the soup tastes flat; if they are fried too long, they can taste bitter or burnt. Draining well keeps excess oil out of the soup.
