What each ingredient does

Lobsters
Provides the main body of meat that forms the potted filling.
Fresh butter
Adds richness and fat, giving the potted lobster a smooth, spreadable texture.
Clarified butter
Forms a sealed top layer that keeps air out of the pots.
Anchovy liquor
Adds savoury depth and salty umami flavour to the lobster.
Lemon juice
Adds acidity that brightens the rich lobster and butter.

The step that matters

Reduce the liquid to a glaze. If the liquid is not reduced enough, the mixture stays wet and will not bind into a firm, spreadable filling. Reducing concentrates the seasonings and flavour before the butter is added.

Swap the mace

How well each one fits the dish's main ingredients (lobster, clove, nutmeg, pepper, lemon, ham, anchovy):

  1. Parsleyfits better
  2. Thymefits better
  3. Marjoramfits better
  4. Macethe original

Fit is the average pairing score against lobster, clove, nutmeg, pepper, lemon, ham, anchovy. Candidates are from the same food group and used in at least 100 recipes.
