Lemon Puffs

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the mixture

  1. In a bowl, beat the sugar with the lemon juice.

  2. Whisk the egg white until frothy and add it to the mixture; whisk for 20 minutes.

  3. Mix in the grated lemon rind and the 3 eggs until well combined.

Bake

  1. Sift sugar over wafer paper and drop small quantities of the mixture onto it.

  2. Bake in a moderately heated oven at 350°F (175°C) until lightly golden.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Bind the mixture and set into a light, airy structure as they bake.
Egg white
Whipped to a froth, it traps air and gives the puffs lightness.
Sugar
Sweetens the puffs and helps them brown lightly in the oven.
Lemon juice
Adds acidity that brightens the flavour and balances the sugar.
Lemon rind
Contributes aromatic citrus oil for a strong lemon fragrance.

The step that matters

Whisking the egg white and mixture for 20 minutes. Beating air into the egg white and mixture creates the foam that makes the puffs light; under-whisking leaves them dense and flat.
