Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Heavy cream
Whipped by air into a foam that holds its shape once the fat network sets.
Powdered sugar
Sweetens the cream and dissolves easily because it is finely ground.
Gum dragon (gum arabic)
Thickens the liquid and helps stabilise the foam so it holds its structure.
Lemon juice
Adds acidity that brightens the sweetness of the cream.

The step that matters

Strain the whipped mixture through a fine sieve to drain excess liquid.. Excess liquid left in the foam can make it weep and collapse, so draining it helps the cream hold its shape in the trifle.
