Roast Beef

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat the oven to 400°F (200°C).

  2. Prepare a bed of chopped onion, celery root, carrot, parsley, and bay leaf in a roasting pan.

  3. Place the roast on top of the bed of vegetables.

Roast

  1. Roast for 10 minutes per pound for rare, 12‑15 minutes for medium, or 20 minutes for well done.

  2. Do not season until the roast is browned, then sprinkle with salt and pepper.

  3. Baste frequently with the juices and fat that drip from the roast.

  4. Turn the roast carefully, avoiding piercing it.

  5. Once browned, reduce the oven temperature to 350°F (175°C) and continue roasting until done.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sirloin, porterhouse, or rib roast
Provides the main meat, whose fat and connective tissue keep the slices moist and flavorful.
Onion
Forms a flavor base in the pan that adds aroma to the drippings.
Celery root
Adds savory, aromatic flavor to the vegetable bed under the roast.
Carrot
Adds subtle sweetness and aroma to the vegetable bed and drippings.

The step that matters

Season after browning, not before. Salt drawn onto the surface early can draw out moisture, and the browned crust forms best on a drier surface. Waiting until the roast is browned keeps the crust developing properly before seasoning.

Swap the onion

How well each one fits the dish's main ingredients (celery, carrot, parsley, pepper):

  1. Parsnipfits better
  2. Turnipfits better
  3. Capsicumfits better
  4. Onionthe original

Fit is the average pairing score against celery, carrot, parsley, pepper. Candidates are from the same food group and used in at least 100 recipes.
