What each ingredient does

Reed birds
The main meat, which cooks through by roasting, steaming or baking.
Butter
Placed inside each bird, it melts and adds moisture and richness to the lean meat.
Large potatoes
Hollowed out to hold the birds upright while they bake in the pan.

The step that matters

Bake until done with only a little water. Small birds are lean and dry out quickly in heat. Checking for doneness rather than following a fixed time helps keep the meat moist, and the small amount of water in the pan adds steam without soaking the birds.

Swap the potato

How well each one fits the dish's main ingredients (pepper, butter):

  1. Capsicumfits better
  2. Potatothe original
  3. Carrotfits less well
  4. Onionfits less well

Fit is the average pairing score against pepper, butter. Candidates are from the same food group and used in at least 100 recipes.
