Why it works: Pepper and parsley match in chemistry and in kitchens. They rank in the top 2% of all ingredient pairs, and cooks put them together in 34,122 recipes. Both carry 4'-methylacetophenone, which smells bitter almond. The science ↓

Canvas Back Duck Roasted

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Clean the duck and wipe it dry.

  2. Rub the inside and outside with fat or butter, then season with salt and pepper.

  3. Stuff the duck as you would any other fowl.

Roast and make the gravy

  1. Roast the duck in a 400°F (200°C) oven for about 1 hour.

  2. In a saucepan, boil the giblets and wings slowly with a little water.

  3. Add the chopped onion and parsley to the saucepan.

  4. Thicken the gravy with a little flour.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Canvasback duck
Provides the main meat, which cooks through in the oven and carries the dish.
Fat or butter
Coats the skin, adding richness and helping it brown during roasting.
Flour
Thickens the gravy so it clings to the meat instead of running thin.

Swap the onion

How well each one fits the dish's main ingredients (butter, pepper, parsley, flour):

  1. Shallotfits better
  2. Carrotfits better
  3. Chivefits better
  4. Onionthe original

Fit is the average pairing score against butter, pepper, parsley, flour. Candidates are from the same food group and used in at least 100 recipes.
