Pigeon Pie

Ingredients

Directions

The book gives no oven temperature. The 300°F (150°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Prepare the pigeons by cleaning and seasoning them with salt and pepper.

  2. Heat fat or butter in a stew pan, then add the pigeons and stew until tender.

  3. Line a deep pie plate with puff pastry.

  4. Cut up the stewed pigeons and place them in the pie plate.

  5. Add chopped hard boiled eggs and minced parsley, then season with salt and pepper.

  6. Dot with flakes of butter rolled in flour, then pour over the gravy from the stewed pigeons.

  7. Cover with a crust and bake at 300°F (150°C) until done.
