Russian Punch Tart

Ingredients

Directions

Bake and soak

  1. Bake three layers of sponge cake or almond tart, flavoring with ⅓ cup arrack.

  2. Once baked, scrape out part of the thickest layer and reserve the crumbs from the scraped portion.

  3. Boil ½ pound sugar in ¼ cup water until it stands, then add ⅓ cup rum to the syrup.

  4. Add the reserved crumbs to the syrup.

  5. Spread the syrup and crumbs mixture over the cake layers.

  6. Stack the layers on top of each other.

Make the filling

  1. For an alternative filling, thin crab-apple jelly or apple marmalade with a little brandy.

  2. If the jelly is unavailable, grate a large tart apple.

  3. Add grated lemon peel, one egg, and one cup sugar to the grated apple.

  4. Boil the apple mixture for five minutes while stirring.

  5. Spread this filling between the layers.

Frost

  1. Frost the cake with boiled icing flavored with rum.

What each ingredient does

Sponge cake or almond tart
Forms the layered structure that holds the soaked crumbs and filling.
Sugar
Sweetens the syrup and helps it thicken into a moist, sticky soak.
Crumbs from the thickest layer of cake
Absorb the syrup and add body and moisture to the filling.
Rum
Adds aroma and flavor to the syrup and the boiled icing.
Egg
Thickens the cooked apple mixture into a set, spreadable filling.
1 large tart apple
Adds moisture and tart acidity that balances the sweetness of the filling.

The step that matters

Boiling the apple mixture with egg. The egg must be cooked while stirring constantly so it thickens the apple filling without scrambling. Stirring spreads heat evenly, so the mixture sets smoothly instead of curdling or sticking to the pan.

Swap the apple

The recipe marks apple as optional. How well each one fits the dish's main ingredients (almond, sugar, rum, crab, brandy, lemon, egg):

  2. Raisinfits better
  3. Orangefits better
